A guide to the world of extra virgin olive oil

William and Anessa Negri, who always aim at high quality, improve their already splendid position in our Guide. Their farm is situated in Trget, in the municipality of Raša, along the eastern coast of the Istrian peninsula. Here they carry on a family tradition and since 2001 have been running 12 hectares of olive grove with 6,000 trees. In the last harvest 1,200 quintals of olives were produced, equal to a yield of 120 hectolitres of oil.
We recommend the very good Extra Virgin selection Negri, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is ample and rotund, endowed with vegetal hints of artichoke, chicory and lettuce, together with fresh fragrant notes of mint and rosemary. Its taste is elegant and complex, with a spicy flavour of black pepper and an almond finish. Bitterness is definite and pungency is distinct and well balanced.
