A guide to the world of extra virgin olive oil

The farm owned by Franko and Rožana Červar is greatly improving, as shown by their score in our Guide. For thirty years the Červar have been running an estate in Novigrad, consisting of about 12 hectares of specialized olive grove with 3,000 trees. In the last harvest 300 quintals of olives were produced, equal to a yield of almost 31 hectolitres of extra virgin olive oil.
There are two very good Extra Virgin selections Červar, the Monovarietal Istarska Bjelica and San Servolo, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is ample and rotund, endowed with vegetal hints of artichoke, wild chicory and lettuce, enriched with notes of mint and rosemary. Its taste is exuberant and complex, with a spicy flavour of black pepper and a sharp almond finish. Bitterness is distinct and pungency is present and complimentary.
